Peanut butter and chocolate is a match made in heaven. If you aren’t already a believer, this recipe might convert you. Try this recipe after making a batch of Sugared Chocolate Grahams.
2 CUPS POWDERED SUGAR
1½ CUPS CRUSHED SUGARED CHOCOLATE GRAHAMS (SEE HERE )
1 CUP ALL-NATURAL SMOOTH PEANUT BUTTER
½ CUP PLUS 6 TABLESPOONS COCONUT OIL, DIVIDED
3 TABLESPOONS WATER
1 CUP VEGAN CHOCOLATE CHIPS OR CAROB CHIPS
1. In the bowl of a stand mixer, combine the powdered sugar and crushed graham crackers.
2. Beat in the peanut butter, ½ cup coconut oil, and water until the mixture is smooth and creamy.
3. Line an 8 x 8-inch baking dish with foil and spread the peanut butter mixture evenly along the bottom of it.
4. Combine the remaining coconut oil with the chocolate chips in a double boiler over medium-low heat.
5. Heat the mixture until melted, then stir smooth.
6. Spread the chocolate over the peanut butter layer as evenly as possible.
7. Chill for 1 hour.
8. Cut into 2-inch squares to serve.
