Chocolate Peanut Butter Rice Bars

MAKES ABOUT 18 BARS

Pack one of these into your child’s lunch or keep the bars on hand for an afternoon snack. These treats are quick to make and sure to satisfy your snack cravings.

COOKING SPRAY

8 CUPS BROWN RICE CEREAL

¼ CUP FLAXSEED MEAL

2 TABLESPOONS UNSWEETENED COCOA POWDER

1 CUP BROWN RICE SYRUP

½ CUP PEANUT BUTTER

¾ TEASPOON VANILLA EXTRACT

1. Lightly oil a 9 x 13-inch glass baking dish with cooking spray and set aside.

2. In a large bowl, stir together the brown rice cereal, flaxseed, and cocoa powder.

3. In a small pan, combine the brown rice syrup, peanut butter, and vanilla extract over medium heat.

4. Heat the mixture, stirring occasionally, until smooth and melted, about 5 minutes.

5. Pour the melted syrup mixture into the bowl with the cereal and stir well until it is completely incorporated.

6. Press the cereal mixture into the baking dish and pat it down evenly by hand.

7. Cover and chill for 1 hour before cutting.
