MAKES 8 TO 10 BARS
These bars are the perfect snack if you find yourself craving something sweet. Made with pumpkin and oats, these are rich in dietary fiber as well as delicious taste.
COOKING SPRAY
1 CUP PUMPKIN PUREE
½ CUP LIGHT BROWN SUGAR, PACKED
1 TEASPOON VANILLA EXTRACT
1 CUP OLD-FASHIONED ROLLED OATS
1 CUP UNBLEACHED ALL-PURPOSE FLOUR (OR WHITE RICE FLOUR)
1½ TEASPOONS PUMPKIN PIE SPICE
1 TEASPOON BAKING POWDER
½ CUP UNSWEETENED COCONUT MILK
1. Preheat oven to 350°F.
2. Lightly oil a square 8 x 8-inch glass dish.
3. Combine the pumpkin puree and brown sugar in a medium bowl and beat on medium speed with a hand mixer until fluffy.
4. Beat in the vanilla extract and then set aside.
5. In a separate bowl, stir together the oats, flour, pumpkin pie spice, and baking powder.
6. Fold the oat mixture into the pumpkin-puree mixture.
7. Whisk in the milk, pouring it in a steady stream, and beat until a smooth dough forms in the bowl.
8. Transfer the dough to the prepared dish and bat it down evenly.
9. Bake for 18 to 22 minutes, until the dough is lightly browned on the edges.
10. Set the dish aside to cool completely before serving.
