This book would never have seen the light of day had it not been for the substantial help I received on the health front from Dr John Briffa, who read the manuscript and gave me his comments. John is Britain’s most thoughtful, informed and truly independent commentator on nutrition matters. His book, Waist Disposal, is essential reading and his blog (http://www.drbriffa.com) provides invaluable insight into contemporary health debates.
At many points while writing this book, I relied on the unstinting support and advice of my dear friend and colleague, the food writer and author Lynda Brown. She is a mine of food information, insight and experience, and as always, exceptionally generous with it.
Once again, I count my lucky stars that I have an editor who is as patient, loyal and determined as Louise Haines at Fourth Estate. Her calmness, composure and dogged confidence make her a tower of strength.
A number of other busy and impressive people have made time to help me with this book, by reading sections and commenting on them, or by providing information: Chef Roy Brett who runs the brilliant fish restaurant in Edinburgh, Ondine; environmental journalist, Rob Edwards; venison authority, Nicola Fletcher, Sascha Grierson of Hugh Grierson Organic, Philip Lymbery and Peter Stevenson of Compassion in World Farming; Iain Mellis, pioneer of British and Irish artisan cheese; Pete Riley, of the tireless and much-needed GM Freeze campaign, local food pioneer, Mike Small; Matthew Roberts, of the inspiring Steamie Bakehouse, and Richard Young, of Kite’s Nest Farm, whose knowledge on all aspects of livestock production is breathtaking.
To all these people, I extend the very warmest thanks.
