GRILLED SWEET POTATOES
with maple & thyme
Sweet, spicy, and salty, these snackable sweet potatoes will satisfy all your taste buds. Coating them with maple syrup and seasonings before grilling gives them a flavorful, caramelized exterior.

INGREDIENTS
5 tbsp olive oil
5 tbsp pure maple syrup
3 tbsp kosher salt
6 garlic cloves, minced, plus more to serve
2 tsp finely chopped fresh thyme leaves
1⁄4 tsp crushed red pepper flakes
6 large sweet potatoes, about 3lb (1.4kg) in total, peeled and cut into thick wedges
2 tbsp finely chopped fresh flat-leaf parsley
METHOD
1 Preheat the grill to 400°F (204°C) using direct heat with a cast iron grate installed.
2 In a large bowl, whisk together oil, syrup, salt, garlic, thyme, and red pepper flakes. Add potatoes and toss to coat. Season with more salt (if desired).
3 Place wedges on the grate, being sure to shake off excess liquid, close the lid, and grill until lightly golden brown and just cooked through, about 15 to 20 minutes, turning often.
4 Transfer to a serving bowl and immediately toss with parsley and more minced garlic (if desired). Season with salt to taste.
TIP
Leave the skins on the sweet potatoes for an even crunchier texture. Plus, the skins provide nutrients that complement what the flesh offers.
