FIRST THING

Breakfast is widely considered the most important meal of the day, especially for kids. It provides essential fuel for our brains and bodies and also gets our metabolism working. As a busy mom trying to make healthy choices, though, it’s often the meal I struggle with the most. Sure, a frozen waffle, toasted bagel, or quick bowl of cereal are all breakfast standbys for a reason, but these carb- and sugar-loaded options don’t offer the sustained energy we need to function at our best. The recipes in this chapter, like Ginger Chia Pudding (here), Migas (here), and Pitaya Bowl (here), are almost as quick to prepare and way better for you. These easy breakfast recipes help my kids concentrate at school and keep me from passing out in my morning cardio class.
