ON THE GO

In a dream world, I’d eat every meal at a table with a cloth napkin and silver cutlery; in reality, I’m often spreading almond butter on a rice cake while rushing out the door. On days when I’m running straight from a meeting to a soccer game, I need food that packs up easily and satisfies me without feeling heavy (which means no fast food and no sad, wilted salads from a grab ’n’ go fridge). This chapter has simple recipes for soups, salads, and wraps that can be made in advance and eaten just about anywhere (including on an airplane, the toughest place to find healthy food). Many can be prepped the night before, and most use leftover ingredients like roast chicken and cooked rice, so if I plan ahead, prep is quick and painless.
