Ellen L. Madison (Woody Hill Bed & Breakfast, Westerly, Rhode Island)
Serves 6
10–12 Rhode Island greening apples, peeled, cored, and sliced
1 tablespoon cinnamon
¼ teaspoon salt
1½ tablespoons sugar
½ cup water
1 cup sugar
1 cup all-purpose flour
1 stick (½ cup) unsalted butter
Preheat an oven to 350°F. Fill a buttered 9- by 13-inch baking pan with the apples until quite full. In a separate bowl, combine the cinnamon, salt, and sugar. Sprinkle the mixture over the apples. If desired, add more cinnamon, and sprinkle over the apples until they are brown with the cinnamon. Pour water over the apples.
Mix together the sugar, flour, and butter with your fingers. Spread over the apples and bake for 45–50 minutes at 350°F. Serve with ice cream or fresh whipped cream, if desired (see Baking Tips on whipped cream, this page).
