Yields 2 (9-inch) cheesecakes

A Silverware Affair is a catering company with several locations, but their headquarters is in Chattanooga, Tennessee, where Moon Pies are popular. They suggested pairing this with a Coca-Cola, which was first bottled in their city, too. Both are Southern favorites. The recipe also works well with other add-ins, such as Oreos®, Twix® pieces, and various candies.

Graham cracker crust, for 2 9-inch spring-form pans

1 quart heavy cream

1¾ cups sugar

1 package (1 tablespoon) gelatin

1½ teaspoons pure vanilla

4 pounds cream cheese, softened

5 Moon Pies®, diced into ⅛-inch chunks

Prepare the graham cracker crust using the directions on page xxx. Mix the cream, sugar, gelatin, and vanilla over medium heat until the gelatin is dissolved. Cool for 10 minutes and add cream cheese. Mix together. Gently fold in the Moon Pies® and pour into the graham cracker crust shells. Cool for a minimum of 2 hours to set; then cut, serve, and enjoy.
