Za'atar Fried Chicken

Ingredients
  • 2 cups buttermilk
  • 2 eggs egg
  • 2 teaspoons black pepper ground black pepper
  • 8 pieces chicken breasts boneless chicken breast halves butterflied and but into thin
  • 2 teaspoons salt
  • 4 cups olive oil olive oil for frying
  • 1/4 cup sumac powder
  • 1/4 cup marjoram dried marjoram
  • 1/4 cup thyme ground thyme
  • 2 tablespoons sesame seeds toasted sesame seeds
  • 2 teaspoons salt
  • 4 cups flour
Directions
Step 1 Combine buttermilk, egg, 1 teaspoon salt, and black pepper in a resealable plastic bag. Add chicken pieces, seal bag, and shake. Refrigerate at least one hour.
Step 2 Heat essential olive oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
Step 3 Combine sumac powder, marjoram, thyme, sesame seeds, and 1 teaspoon salt in a lidded container, cover, and shake to mix. Measure out 2 tablespoons of za'atar mixture and mix with flour in a shallow bowl.
Step 4 Remove chicken pieces from brine and get rid of excess liquid. Dredge chicken in flour mixture, shaking off excess flour and dipping chicken back to the brine. Dredge another amount of time in the flour and gently place it into hot essential olive oil.
Step 5 Fry in batches until chicken is golden brown, 5 to ten minutes per side, based on the thickness of chicken white meat. Remove from fryer and drain in writing towels, sprinkling with an increase of za'atar spice mixture soon after removing chicken from oil.
