City Fried Chicken

Ingredients
  • 4 cups all-purpose flour
  • 1 cup dry bread crumbs
  • 2 tablespoons salt (optional)
  • 1/4 cup seasoned salt
  • 1/4 cup paprika
  • 1/4 cup lemon pepper
  • 4 beaten eggs
  • 4 cups milk
  • 10 pounds chicken drumsticks and thigh pieces
  • 3 cups vegetable oil for frying
Directions
Step 1 Place the flour, bread crumbs, salt, lemon pepper, seasoned salt, and paprika into a huge resealable plastic zipper bag, and stir the mixture to thoroughly combine.
Step 2 Whisk the eggs and milk together in a huge shallow bowl. Rinse off the chicken pieces, and place two or three 3 pieces at the same time into the plastic bag. Seal the bag, shake many times to thoroughly coat the chicken with seasoned flour mixture, and dip into the egg mixture. Place the chicken pieces back to the flour, shake to coat, and dip; repeat once more, giving each chicken piece 2 dips in the egg mixture and 3 coatings of seasoned flour.
Step 3 Heat oil in a huge skillet with deep sides before oil shimmers; gently add the chicken in batches, either all drumsticks or all thighs. Cover the skillet, and fry before juices run clear and the coating is starting to brown, 10 to quarter-hour; uncover and cook the chicken before the coating is golden brown, another 5 to ten minutes.
