Oven-Fried Chicken

Ingredients
  • 4 cups panko bread crumbs
  • 1 teaspoon garlic powder
  • kosher salt
  • freshly ground black pepper
  • 6 large eggs
  • 1/2 cup buttermilk
  • 6 tablespoons dijon mustard
  • 1/4 cup barbecue sauce
  • 12 bone-in, skin-on chicken thighs
  • 2 tablespoons mayonnaise
  • 1 1/2 tablespoons honey
Directions
Preheat oven to 425°. Line a baking sheet with aluminum foil. In a medium bowl, mix together panko bread crumbs and garlic powder and season with salt and pepper. In another medium bowl, whisk together eggs and buttermilk. Pat thighs dry, then dip into the egg mixture, then dredge in panko, making sure all sides are completely coated. Put on a prepared baking sheet and bake until golden and crispy, and a thermometer inserted in the guts reads 180°, about one hour. Make the dipping sauce: In a huge bowl, whisk together Dijon, barbecue sauce, mayonnaise, and honey. Serve chicken with dipping sauce.
