Isaiah's Pretzel Fried Chicken

Ingredients
  • 1/2 cup all-purpose flour
  • 4 eggs
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 tablespoons dried italian herb seasonings
  • 2 cups finely crushed pretzels
  • 2 teaspoons ground cayenne pepper
  • 2 teaspoons ground paprika
  • 8 skinless, boneless chicken breasts halves
  • 1/2 cup vegetable oil for frying
Directions
Step 1 Place the flour in a bowl, and reserve. Beat the eggs in another bowl. Mix together the crushed pretzels, Parmesan cheese, Italian seasoning, cayenne pepper, and paprika in a third bowl.
Step 2 Rinse the chicken white meat halves, and pat them dry with paper towels. Gently press the chicken breasts into the flour to coat, and get rid of the surplus flour. Dip into the beaten egg, then press into the pretzel crumb mixture. Gently toss in the middle of your hands so any crumbs that haven't stuck can fall away. Place the breaded chicken breasts onto a plate while breading the others; do not stack.
Step 3 Heat the oil in a skillet over medium heat and fry the coated chicken breasts about 5 to 7 minutes per side before the coating is golden brown and the juices run clear.
