Oven-Fried Chicken Breasts

- 2 1/2 large skinless, boneless chicken breasts, halved lengthwise

- 6 tablespoons vegetable oil, divided
|
|
|
- 1 1/2 teaspoons garlic powder, divided
|
|
|
- 2 tablespoons white vinegar
|
|
|
- 1 tablespoon salt, divided
|
|
|
- 1 teaspoon cayenne pepper, divided
|
|
|
- 6 tablespoons all-purpose flour
|
|
|
- 1/4 cup shredded Cheddar cheese
|
|
|
- 1 tablespoon chopped fresh chives
|

Directions
Step 1 Mix chicken, 1/4 cup vegetable oil, vinegar, 1 tablespoon salt, 1 1/2 teaspoon garlic powder, and 1 teaspoon cayenne pepper together in a sizable bowl. Cover with plastic wrap; place in the refrigerator.
Step 2 Preheat oven to 400 degrees F (200 degrees C).
Step 3 Pour remaining 1/2 cup vegetable oil right into a shallow baking pan; place in the preheating oven for 20 minutes.
Step 4 Mix remaining 1 tablespoon salt, 1 1/2 teaspoon garlic powder, 1 teaspoon cayenne pepper, and flour together in a shallow bowl. Disseminate evenly in the bowl.
Step 5 Remove baking pan from the oven. Dredge chicken in the flour mixture, one piece at the same time, and gently place it into the hot oil.
Step 6 Bake chicken in the preheated oven, turning once halfway through, until golden brown, about thirty minutes.
Step 7 Top chicken with Cheddar cheese and chives.
