Cheesy Summer Squash
Prep time: 15 minutes | Cook time: 15 minutes | Serves 4
½ cup vegetable oil, plus 3 tablespoons
¼ cup white wine vinegar
1 garlic clove, grated
2 summer squash, sliced lengthwise about ¼-inch thick
1 red onion, peeled and cut into wedges
Sea salt, to taste
Freshly ground black pepper, to taste
1 (8-ounce / 227-g) package crumbled feta cheese
Red pepper flakes, as needed
  1. Insert the Grill Grate and close the hood. Select GRILL, set the temperature to MAX, and set the time to 15 minutes. Select START/STOP to begin preheating.
  2. Meanwhile, in a small bowl, whisk together ½ cup oil, vinegar, and garlic, and set aside.
  3. In a large bowl, toss the squash and onion with remaining 3 tablespoons of oil until evenly coated. Season with the salt and pepper.
  4. When the unit beeps to signify it has preheated, arrange the squash and onions on the Grill Grate. Close the hood and GRILL for 6 minutes.
  5. After 6 minutes, open the hood and flip the squash. Close the hood and GRILL for 6 to 9 minutes more.
  6. When vegetables are cooked to desired doneness, remove them from the grill. Arrange the vegetables on a large platter and top with the feta cheese. Drizzle the dressing over the top, and sprinkle with the red pepper flakes. Let stand for 15 minutes before serving.
