Cheesy Summer Squash
Prep time: 15 minutes | Cook time: 15 minutes | Serves 4
½ cup vegetable oil, plus 3 tablespoons
¼ cup white wine vinegar
1 garlic clove, grated
2 summer squash, sliced lengthwise about ¼-inch thick
1 red onion, peeled and cut into wedges
Sea salt, to taste
Freshly ground black pepper, to taste
1 (8-ounce / 227-g) package crumbled feta cheese
Red pepper flakes, as needed
- Insert the Grill Grate and close the hood. Select GRILL, set the temperature to MAX, and set the time to 15 minutes. Select START/STOP to begin preheating.
- Meanwhile, in a small bowl, whisk together ½ cup oil, vinegar, and garlic, and set aside.
- In a large bowl, toss the squash and onion with remaining 3 tablespoons of oil until evenly coated. Season with the salt and pepper.
- When the unit beeps to signify it has preheated, arrange the squash and onions on the Grill Grate. Close the hood and GRILL for 6 minutes.
- After 6 minutes, open the hood and flip the squash. Close the hood and GRILL for 6 to 9 minutes more.
- When vegetables are cooked to desired doneness, remove them from the grill. Arrange the vegetables on a large platter and top with the feta cheese. Drizzle the dressing over the top, and sprinkle with the red pepper flakes. Let stand for 15 minutes before serving.
