Beer Battered Cod Sandwich

2 large eggs
10 ounces (284 g) beer (an ale, IPA, or any type you have on hand will work)
1½ teaspoons hot sauce
1½ cups cornstarch
1½ cups all-purpose flour
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
4 (5- or 6-ounce / 142- or 170-g) fresh cod fillets
Nonstick cooking spray
4 soft rolls, sliced
Tartar sauce
Lettuce leaves
Lemon wedges
  1. Insert the Crisper Basket and close the hood. Select AIR CRISP, set the temperature to 375ºF (191ºC), and set the time to 15 minutes. Select START/STOP to begin preheating.
  2. While the unit is preheating, whisk together the eggs, beer, and hot sauce in a large shallow bowl. In a separate large bowl, whisk together the cornstarch, flour, salt, and pepper.
  3. One at a time, coat the cod fillets in the egg mixture, then dredge them in the flour mixture and coat on all sides. Repeat with the remaining cod fillets.
  4. When the unit beeps to signify it has preheated, spray the Crisper Basket with the cooking spray. Place the fish fillets in the basket and coat them with the cooking spray. Close the hood and AIR CRISP for 15 minutes.
  5. After 15 minutes, check the fish for desired crispiness. Remove from the basket.
  6. Assemble the sandwiches by spreading tartar sauce on one half of each of the sliced rolls. Add one fish fillet and lettuce leaves, and serve with lemon wedges.
