Bourbon Pork Chops
Prep time: 5 minutes | Cook time: 35 minutes | Serves 4
2 cups ketchup
¾ cup bourbon
¼ cup apple cider vinegar
¼ cup soy sauce
1 cup packed brown sugar
3 tablespoons Worcestershire sauce
½ tablespoon dry mustard powder
4 boneless pork chops
Sea salt, to taste
Freshly ground black pepper, to taste
  1. In a medium saucepan over high heat, combine the ketchup, bourbon, vinegar, soy sauce, sugar, Worcestershire sauce, and mustard powder. Stir to combine and bring to a boil.
  2. Reduce the heat to low and simmer, uncovered and stirring occasionally, for 20 minutes. The barbecue sauce will thicken while cooking. Once thickened, remove the pan from the heat and set aside.
  3. While the barbecue sauce is cooking, insert the Grill Grate into the unit and close the hood. Select GRILL, set the temperature to MEDIUM, and set the time to 15 minutes. Select START/STOP to begin preheating.
  4. When the unit beeps to signify it has preheated, place the pork chops on the Grill Grate. Close the hood, and GRILL for 8 minutes. After 8 minutes, flip the pork chops and baste the cooked side with the barbecue sauce. Close the hood, and GRILL for 5 minutes more.
  5. Open the hood, and flip the pork chops again, basting both sides with the barbecue sauce. Close the hood, and GRILL for the final 2 minutes.
  6. When cooking is complete, season with salt and pepper and serve immediately.
