Golden Corn Biscuits

1½ cups all-purpose flour, plus additional for dusting
½ cup yellow cornmeal
2½ teaspoons baking powder
½ teaspoon sea salt
¹⁄₃ cup vegetable shortening
²⁄₃ cup buttermilk
Nonstick cooking spray
- In a large bowl, combine the flour, cornmeal, baking powder, and salt.
- Add the shortening, and cut it into the flour mixture, until well combined and the dough resembles a coarse meal. Add the buttermilk and stir together just until moistened.
- Insert the Crisper Basket and close the hood. Select AIR CRISP, set the temperature to 350ºF (177ºC), and set the time to 15 minutes. Select START/STOP to begin preheating.
- While the unit is preheating, dust a clean work surface with flour. Knead the mixture on the floured surface until a cohesive dough forms. Roll out the dough to an even thickness, then cut into biscuits with a 2-inch biscuit cutter.
- When the unit beeps to signify it has preheated, coat the basket with cooking spray. Place 6 to 8 biscuits in the basket, well spaced, and spray each with cooking spray. Close the hood and AIR CRISP for 12 to 15 minutes, until golden brown.
- Gently remove the biscuits from the basket, and place them on a wire rack to cool. Repeat with the remaining dough.
