Golden Corn Biscuits

1½ cups all-purpose flour, plus additional for dusting
½ cup yellow cornmeal
2½ teaspoons baking powder
½ teaspoon sea salt
¹⁄₃ cup vegetable shortening
²⁄₃ cup buttermilk
Nonstick cooking spray
  1. In a large bowl, combine the flour, cornmeal, baking powder, and salt.
  2. Add the shortening, and cut it into the flour mixture, until well combined and the dough resembles a coarse meal. Add the buttermilk and stir together just until moistened.
  3. Insert the Crisper Basket and close the hood. Select AIR CRISP, set the temperature to 350ºF (177ºC), and set the time to 15 minutes. Select START/STOP to begin preheating.
  4. While the unit is preheating, dust a clean work surface with flour. Knead the mixture on the floured surface until a cohesive dough forms. Roll out the dough to an even thickness, then cut into biscuits with a 2-inch biscuit cutter.
  5. When the unit beeps to signify it has preheated, coat the basket with cooking spray. Place 6 to 8 biscuits in the basket, well spaced, and spray each with cooking spray. Close the hood and AIR CRISP for 12 to 15 minutes, until golden brown.
  6. Gently remove the biscuits from the basket, and place them on a wire rack to cool. Repeat with the remaining dough.
