The pine and citrus notes of the fir needles work magic with fresh oysters. You can make the dressing below, or you can use grand fir jelly (here) and add a fresh squeeze of lemon or lime to balance the sweetness.
1 Tbsp (15 mL) finely minced grand fir needles
1 tsp (5 mL) prepared mustard
2 Tbsp (30 mL) white wine vinegar
1 tsp (5 mL) water
2 Tbsp (30 mL) grapeseed oil
1 green onion, finely minced
12 freshly shucked oysters
In a small bowl, combine the grand fir needles, mustard, vinegar, and water. Whisk to mix and then add the oil in a slow, steady stream. Add the green onion and stir to mix. Season with salt and pepper and set aside until needed.
To serve, spoon a little vinaigrette over each shucked oyster and enjoy!
