Geoduck and pea tips are another great combination. Be careful to stir-fry the geoduck only briefly, prolonged cooking will toughen the meat.
1 cup (250 mL) sliced geoduck
1 Tbsp (15 mL) tapioca flour
1 tsp (5 mL) potato starch
2 Tbsp (30 mL) grapeseed oil
1 tsp (5 mL) salt
1 Tbsp (15 mL) minced garlic paste
1 small red chili, seeded and minced
4 cups (1 L) sweet pea tips (or spinach)
In a mixing bowl, combine the geoduck, tapioca flour, and potato starch; toss to mix. Immediately heat a non-stick skillet over medium-high. Add the oil and heat until almost smoking. Add the geoduck and stir-fry for 2–3 minutes or until the geoduck stiffens and just begins to brown.
Add the salt, garlic, and chili and toss to coat. Add the pea tips and quickly stir-fry until the greens just begin to wilt.
Transfer to a serving platter and serve immediately.
