Brunchy Sausage Bowl

The saltiness of the pork sausage and the creaminess of the corn used in this recipe just spells love. This is a one-pot wonder gone magical, and the whole family will beg you to make it every weekend. And since it’s so easy, you’ll happily oblige.

Serves 4

1 pound pork sausage links

2 large potatoes, peeled and thinly sliced

1 medium red bell pepper, seeded and diced

1 medium sweet onion, peeled and diced

1 (16-ounce) can creamed corn

1/2 teaspoon sea salt

1/4 teaspoon ground black pepper

3/4 cup tomato juice

1 Press the Sauté button on Instant Pot®. Add sausage links and brown for 4–5 minutes. Move the sausages to a plate.

2 Layer the potatoes, bell pepper, onion, and corn in the Instant Pot®. Sprinkle with salt and pepper. Place sausage links on top of the corn. Pour the tomato juice over the top of the other ingredients in the Instant Pot®. Lock lid.

3 Press the Manual button and adjust time to 5 minutes. When the timer beeps, let the pressure release naturally for at least 10 minutes.

4 Quick-release any additional pressure until the float valve drops and then unlock lid. Serve warm.
