1 Press the Sauté button on the Instant Pot®. Heat oil. Add shallots and couscous. Stir-fry for 3–4 minutes until browned. Add broth. Lock lid.
2 Press the Manual button and adjust time to 5 minutes. When timer beeps, let pressure release naturally for 5 minutes. Quick-release any additional pressure until float valve drops and then unlock lid.
3 Drain liquid. Stir in salt and lemon zest. Serve.
