Chicken Chardonnay

If you need an excuse to buy a bottle of wine, this recipe is for you. Drink a glass, share a glass, and then use a glass in this elegant chicken dish that’s complete with traditional Italian spices.

1 On a plate, rub chicken pieces with salt and pepper.

2 Press the Sauté button on Instant Pot®. Heat the oil and add garlic. Sauté for 1 minute or less, just enough to release the garlic’s aroma without burning it. Pour wine and tomatoes into the Instant Pot®. Press the Adjust button to change the temperature to Less and simmer unlidded for 5 minutes.

3 Arrange chicken in a single layer on top of tomato mixture in the Instant Pot®. Add the mushrooms in an even layer. Sprinkle Instant Pot® mixture with thyme and oregano. Lock lid.

4 Press the Manual button and adjust time to 10 minutes. When timer beeps, let pressure release naturally for 10 minutes. Quick-release any additional pressure until float valve drops and then unlock lid. Check the chicken using a meat thermometer to ensure the internal temperature is at least 165°F.

5 Using a slotted spoon, transfer chicken to a serving platter. Press the Sauté button, press the Adjust button to change the temperature to Less, and simmer sauce in Instant Pot® for 5 minutes to thicken. Pour some of the sauce over chicken. Serve warm.
