Traditionally, a “beer can chicken” dish utilizes a beer can placed in the cavity of a chicken that is then grilled or baked. The purpose is to utilize the steamed flavor from the beer. In this Instant Pot® twist, the flavor is distributed while the beer steams around the chicken. Change up the beer variety for a different flavor experience each time.
• Hands-On Time: 10 minutes
• Cook Time: 20 minutes
1 Rub Dijon mustard over the chicken legs.
2 Scatter onion in Instant Pot®. Insert trivet. Add beer. Press the Sauté button and simmer unlidded for 5 minutes (press the Adjust button to change the temperature to Less if mixture starts to boil too vigorously). Arrange chicken standing up, meaty-side down, on the trivet. Lock lid.
3 Press the Poultry button and cook for the default time of 15 minutes. When timer beeps, let pressure release naturally for 10 minutes. Quick-release any additional pressure until float valve drops and then unlock lid. Check the chicken using a meat thermometer to ensure the internal temperature is at least 165°F.
4 Remove chicken from pot and serve.
INSTANT POT® OPTIONS
A standard can of beer is perfect for the recipe. However, the craft beer market has exploded in recent years and this recipe can be altered for the season. There is pumpkin beer for Fall, stout beer for St. Patty’s Day, chocolate beer for Valentine’s Day, and a nice pale lager for, well, the rest of the year!
