1 In a small bowl, whisk together bourbon, maple syrup, mustard, ketchup, garlic powder, onion salt, and smoked paprika. Place chicken in large zip-top bag and pour mixture (reserving 2 tablespoons) over chicken; seal bag and refrigerate for 1 hour.
2 Insert trivet into Instant Pot®. Add water. Arrange chicken standing up, meaty-side down, on the trivet. Lock lid.
3 Press the Poultry button and cook for the default time of 15 minutes. When timer beeps, let pressure release naturally for 10 minutes. Quick-release any additional pressure until the float valve drops and then unlock lid. Check the chicken using a meat thermometer to ensure the internal temperature is at least 165°F.
4 Transfer chicken to a serving tray. Brush with remaining 2 tablespoons sauce and serve.
