Steamed Clams

Serve these clams atop a pile of linguini with a piece of crusty bread on the side. To make this option even more special, substitute a can of diced tomatoes, including juice, for the water to create a warm, hearty linguini sauce.

1 Place clams in the steamer basket. Set aside.

2 Press the Sauté button on Instant Pot®. Heat olive oil. Add onion and sauté 3–5 minutes until translucent. Add garlic and cook another minute. Pour in white wine and water. Insert steamer basket. Lock lid.

3 Press the Manual button and adjust time to 4 minutes. When the timer beeps, quick-release pressure until lid unlocks.

4 Transfer clams to four serving bowls and top with a generous scoop of cooking liquid.

How Do You Purge Clams?

Soak your clams in water with 1–2 tablespoons of cornmeal for 20 minutes. Rinse and drain until there is no more sand.
