This easy recipe is not only quick, but you probably have most of the ingredients in your pantry. The Gruyère adds a little bite and nuttiness to this recipe; however, feel free to substitute the similar-tasting Swiss cheese or even add grated Parmesan cheese to give it a different flavor profile.

1 Drizzle 2 teaspoons olive oil in Instant Pot®. Layer millet into pot. Add vegetable broth and salt. Lock lid.
2 Press the Rice button (the Instant Pot® will determine the cooking time, about 10 minutes pressurized cooking time). When timer beeps, let pressure release naturally for 5 minutes. Quick-release any additional pressure until float valve drops and then unlock lid.
3 Transfer millet to a serving bowl. Toss corn, tomato sauce, and Gruyère cheese in millet. Serve warm.
