Festive Fruitcake

There’s no need to regift this dish as your guests will be astonished that they actually like fruitcake. You may even want to try using some mini loaf pans in the Instant Pot® to create some small red-ribbon gifts that are perfect for coworkers, teachers, or anyone else you want to appreciate. There are 5.75" loaf pans available, so you would have to make these one at a time, but they would fit!

• Hands-On Time: 15 minutes

• Cook Time: 20 minutes

1 In a medium bowl, combine all ingredients except water until well mixed. Grease a 6" cake pan. Press mixture into the pan.

2 Pour 1 cup water into the Instant Pot®. Insert trivet. Lower 6" pan onto trivet. Lock lid.

3 Press the Manual button and adjust time to 20 minutes. When timer beeps, let pressure release naturally for 10 minutes. Quick-release any additional pressure until float valve drops and then unlock lid.

4 Remove fruitcake from Instant Pot® and transfer to a cooling rack. Refrigerate covered overnight. Flip onto a cutting board, slice, and serve.

Why Fruitcake?

The poor fruitcake. It has been regifted and snubbed for years. So why do we keep making it and passing it along to our loved ones? For the haters, this question is asked each year on cue. But, for the lovers of this confection, the joy of this dish dates back to the Romans. Filled with nuts, fruit, sugar, and, most importantly, tradition, the fruitcake is around to stay!
