Pineapple Upside-Down Cake

Traditional pineapple upside-down cakes use sliced pineapples, but because this is a 6" pan, crushed pineapple is a perfect substitute. You can also have fun and get creative with the cherries used in this dish. Make a heart for Valentine’s Day or create whatever pattern your imagination can conceive.

1 Grease a 6" cake pan. Place a circle of parchment paper in the bottom. Add a layer of pineapple and distribute cherries evenly among the pineapple.

2 In a medium bowl, beat egg. Whisk in butter, sugar, and vanilla until smooth. Add remaining ingredients except water. Pour into pan over pineapple and cherries.

3 Pour water into Instant Pot®. Add trivet. Lower cake pan onto trivet. Lock lid.

4 Press the Manual button and adjust time to 35 minutes. When the timer beeps, quick-release pressure until float valve drops and then unlock lid.

5 Remove cake pan from the pot and transfer to a rack to cool. Flip cake onto a serving platter. Remove parchment paper. Slice and serve.
