LEFTOVER CHICKEN ‘CLEAR YOUR FRIDGE’ SALAD

More often than not I have those bothersome little bits left in my fridge that haven’t made it into a dish. The vegetable compartment is often littered with a few salad leaves, and perhaps half a carrot, but I can’t bear to throw away food! Combine those leftovers, mix with Sambal Kampung and Bob’s your uncle! I’ve used leftover roast chicken here, but pork or beef work well too.

Serves 2

100g dried rice vermicelli (optional)

150g leftover cooked chicken (or however much you have), torn into pieces

1 carrot, peeled and grated

handful of spinach leaves (or pretty much any salad leaves)

¼ cucumber, halved lengthways and cut into 0.5cm half moons

5–8 cherry tomatoes, halved

2–3 heaped tbsp Sambal Kampung (here )

1 tbsp crispy shallots, to serve

Place the rice vermicelli, if using, in a heat-proof bowl, cover with boiling water, and leave to soak for 5 minutes, then drain and rinse under cold running water.

Combine the chicken, vegetables, tomatoes, rice vermicelli, if using, and the Sambal Kampung in a large mixing bowl then divide between 2 bowls. Sprinkle with crispy shallots to serve.
