PAPA’S FRIED EGGS
My father and brother love fried eggs, but as a child I hated them. Then, as I grew up, my taste buds matured and I started to enjoy them. I wanted to add a bit of sassiness to a simple fried egg, so over time this dish was born as a tribute to my father. These are lovely served with plain rice.
Serves 4
1 tbsp vegetable oil
4 free-range eggs
2 spring onions, finely chopped
1 red chilli, chopped (de-seeded if you prefer)
10g ginger, peeled and finely diced
1½ tbsp sweet soy sauce
Heat the oil in a non-stick frying pan and fry the eggs sunny-side up until the edges are crispy but the yolks are still soft. Transfer to a plate as soon as they’re cooked to your liking.
Using the same pan, fry the spring onions, chilli and ginger until soft. Sprinkle the mixture on top of the eggs, drizzle with the sweet soy sauce, and serve immediately.
