tart lemon icing

In a large bowl, combine the confectioners’ sugar, butter, and lemon zest. Blend well with a wooden spoon. Gradually beat in the lemon juice until the icing has a nice, spreading consistency. Add a little extra lemon juice if the frosting is too stiff to spread easily, then beat until smooth and fluffy.

MAKES ABOUT 1 ½ CUPS

• 2 ½ cups sifted confectioners’ sugar
• 4 tablespoons unsalted butter, at room temperature
• 2 teaspoons grated lemon zest
• ⅓ cup fresh lemon juice
