This cucumber-infused gin is great in a Martini, a Gibson, or the lesser-known Gin Rickey (typically made with bourbon). Or drink this infusion as-is alongside a seafood dinner.
25 oz. gin
11/2 cups cucumber
1. Wash, peel, and slice 11/2 cups of cucumbers.
2. Place sliced cucumber in bottom of infusion jar.
3. Add gin, covering the cucumber, and seal the jar.
4. Let infuse for 1-2 weeks out of direct sunlight, tasting and gently shaking regularly.
5. Strain the gin into a clean bottle, cap, and refrigerate.
TIP
Use fresh cucumber slices as a garnish.
