LICORICE LOVERS’ INFUSED GIN

25 oz. grain spirit or vodka

1/4 cup juniper berries

1/8 cup cardamom seeds

1/2 cup star anise

1/8 cup fennel seeds

1 fresh lemon (peel)

1. Using a paring knife or vegetable peeler, peel the lemon, making as many 1-inch-wide strips from the peel as possible.

2. Place all ingredients in the bottom of the infusion jar.

3. Add spirit and seal the jar.

4. Let infuse for 3–14 days out of direct sunlight, tasting and gently stirring regularly.

5. Strain the spirit into a clean bottle and cap it.

TIP

You may use chopped fennel leaves in addition to seeds in this infusion if desired.
