Red Velvet Cake with a Smooth Cream Cheese Frosting

Directions:

1. In a mixing bowl, mix together the sugar, flour, buttermilk, oil, baking powder, cocoa powder, food coloring, egg, and oil until well combined.

2. Pour the batter into a greased microwaveable mug or ramekin.

3. Place in the microwave and cook on high for 1 1/2minutes or until cake is done in the center.

4. Remove the cake from the microwave and allow to cool slightly.

5. In a small mixing bowl, whisk together the cream cheese, sugar and butter until smooth and creamy.

6. Spread icing on to cake.

7. Serve.
