Pepper & Beef Stir-Fry

Ingredients:

1 lb. of strip-cut sirloin steak

1 tbsp. of minced ginger root, fresh

3 minced cloves of garlic

1/4 tsp. of pepper, ground

3/4 tsp. of salt, kosher

1 cup of coconut milk, light
-
2 tbsp. of sugar, granulated
-
1 tbsp. of chili sauce, sriracha
-
1/2 tsp. of lime zest, grated
-
2 tbsp. of lime juice, fresh
-
2 tbsp. of oil, canola
-
1 thin strip-cut red pepper, sweet, large
-
1/2 thin-sliced medium onion, red
-
1 de-seeded, thin-sliced jalapeno pepper

4 cups of baby spinach, fresh
-
2 thin-sliced green onions, fresh
-
2 tbsp. of chopped cilantro, fresh
Instructions:
1. In large-sized bowl, toss the beef with 2 cloves of garlic, pepper, ginger and 1/2 tsp. of kosher salt. Allow to stand for 12-15 minutes.
2. In small-sized bowl, whisk the coconut milk, chili sauce, sugar, lime juice, remainder of salt and lime zest till blended well.
3. In large-sized skillet, heat 1 tbsp. of oil on med-high. Add the beef and stir-fry till no pink remains, two to three minutes. Remove beef from the skillet.
4. Stir-fry the jalapeno, red onion, red pepper & remainder of garlic in last of oil till veggies are tender but crisp, two to three minutes. Add and stir in the coconut milk mixture and heat it through.
5. Add beef and spinach and cook, occasionally stirring, till beef has heated through and spinach wilts. Sprinkle with cilantro and green onions. Serve.
