Broccolini with Shiitake Mushrooms

Ingredients:
For the sauce:

2 tbsp. of vinegar, rice wine

1 tsp. of oil, sesame

2 tbsp. of soy sauce, reduced sodium

1 tsp. of hot chili or sriracha sauce
-
1/2 tsp. of crushed pepper, red
-
1 minced garlic clove
-
1 tsp. of grated ginger, fresh
For the Vegetables:
-
2 bunches of trimmed broccolini, fresh
-
1 tbsp. of oil, vegetable
-
2 cups of trimmed, halved mushrooms, shiitake
-
1/2 cup of 1/4” diced bell pepper, red
-
Salt, kosher, as desired
-
Pepper, ground, as desired

2 tbsp. of bias-sliced onions, green
-
1 tsp. of toasted seeds, sesame
Instructions:
1. Combine sauce ingredients well in small-sized bowl and set it aside.
2. In med. saucepan of boiling, salted water, blanch broccolini till tender and bright green, two minutes or so.
3. Drain the broccolini. Wash it with cold tap water so it will stop cooking. Set it aside.
4. Heat 1 tbsp. oil on med-high in wok.
5. Add mushrooms. Sauté till tender, about three minutes.
6. Add bell peppers. Sauté for a minute.
7. Add cooked broccolini. Cook for a minute more.
8. Reduce heat level to low. Add some sauce. Toss veggies in sauce and cook for two minutes or so. Season as desired.
9. Transfer veggies to dish. Pour some sauce on top. Use sesame seeds and green onions to garnish. Serve.
