Chicken Lo Mein

Ingredients:

1/2 lb. 1/4"-sliced chicken breasts, skinless, boneless

1/2 tsp. salt, kosher

1/4 tsp. pepper, ground

1 & 1/2 tsp. oil, sesame

3 tbsp. sauce, oyster
-
1 tbsp. soy sauce, low sodium
-
1/4 cup chicken broth, unsalted

1 tsp. corn starch
-
2 tbsp. oil, vegetable
-
1 tsp. garlic, minced
-
1 tsp. ginger, minced
-
2 oz. Bok choy, baby, with separated leaves

1/2 cup carrots, shredded
-
1 lb. lo Mein noodles, fresh

1/2 cup bean sprouts
-
1/4 cup green onions, sliced
Instructions:
1. In medium-sized bowl, combine the chicken slices, kosher salt, ground pepper and 1/2 tsp. of sesame oil.
2. In small sized bowl, whisk 1 tsp. of sesame oil, soy sauce, chicken broth, oyster sauce and corn starch together.
3. Heat wok on med-high. Add vegetable oil. Once oil is heated, add ginger and garlic. Stir-fry for 15-20 seconds.
4. Add single layer of chicken. Allow it to cook for a minute. Do not stir. After that one minute, stir while cooking for 1/2 minute.
5. Add the carrots and Bok choy. Cook for one minute.
6. Loosen noodles. Add to wok. Stir-fry for a minute.
7. Add sauce mixture. Stir while cooking till sauce thickens, a minute or so.
8. Add green onions and bean sprouts and cook for one minute. Serve while still hot.
