General Tso’s Chicken

Makes 4 Servings

Ingredients:
For the chicken
Optional: 1 tsp. of wine, Shaoxing
For the sauce
For stir-frying
Instructions:
1. Combine the chicken with soy sauce, Shaoxing wine (if you’re using), kosher salt and ground pepper in medium mixing bowl.
2. Toss the seasoned chicken with corn starch. Coat evenly.
3. In wok, heat two cups oil on med-high till it hits 350F.
4. Shake off excess corn starch from chicken. Add chicken to oil in batches and fry till golden brown in color and cooked through, two to four minutes.
5. Transfer the chicken to sheet pan lined with paper towels. Repeat with the remainder of chicken.
6. Discard oil from the wok. Wipe inside of pan. Dry fully.
7. Whisk chili oil, hoisin sauce, soy sauce, vinegar, chicken broth, honey, oyster sauce & corn starch in medium mixing bowl. Set it aside.
8. Heat the wok on med-high. Add 1 tbsp. of vegetable oil.
9. After oil has heated, add green onions, dried chilies, ginger and garlic. Stir-fry for 1/2 minute.
10. Add the sauce. Stir while cooking till it thickens, a minute to a minute and a half. Taste the sauce. Season as desired.
11. Add chicken pieces and stir, combining well.
12. Use green onions and sesame seeds to garnish. Serve.
