passion fruit and lavender porridge

100g (3½oz/1 cup) rolled oats

300ml (10fl oz/1¼ cups) sweetened soya milk

½ teaspoon lavender extract

2 passion fruits

Enjoy that homely scent of porridge bubbling in a pan. Add the subtle flavour of lavender and top with exotic, fruity passion fruit for a naturally sweet breakfast. Be sure to choose lavender extract without artificial flavours, for the best taste.

Add the oats and soya milk to a pan and gently bring to the boil for 4–5 minutes over a low-medium heat. Spoon through the lavender extract, increase the heat to medium‚ and cook for another 2 minutes, stirring frequently.

Whilst the porridge is cooking, cut the passion fruits in half. Spoon the porridge into bowls and scoop out the seedy flesh of the passion fruits, serving over the porridge.
