banana split ice cream

serves 4

4 frozen bananas

4 tablespoons maple syrup

1 tablespoon vanilla soya yoghurt

1 tablespoon smooth peanut butter

1 tablespoon roughly crushed salted pretzels

1 tablespoon glacé (candied) cherries (ensure carmine free)

2 teaspoons flaked (slivered) almonds

1 teaspoon dark chocolate chips

No ice-cream maker? No problem! This recipe combines all the best parts of a classic banana split into a sweet treat that will transport you to retro times. If you like your ice cream full of surprises, this is definitely the recipe for you.

Put the frozen bananas, maple syrup, soya yoghurt, and peanut butter into a high-powered blender or food processer and blitz until completely smooth.

Stir through the pretzels, glacé cherries, flaked almonds, and chocolate chips until combined and serve immediately.

I always keep a few bananas in the freezer to make this ice cream on a whim. Remove the banana skin before freezing (peeling a frozen banana is more difficult than it sounds!) and keep skinned bananas in sealed bags until you need them.
