6 ripe blackberries
1 tablespoon caster (superfine) sugar
6 fresh mint leaves
1 unwaxed lime
50ml (2fl oz/¼ cup) white rum
2 tablespoons crushed ice
200ml (7fl oz/scant 1 cup) chilled sparkling soda water
Something tall, dark, and handsome – for one!
In a tall glass, add the blackberries, sugar, and mint leaves. Chop the lime in half and squeeze in the juice through a sieve, muddling together the ingredients with a stirrer or spoon.
Pour in the rum and ice, followed by the soda water. Enjoy immediately.
Using ripe blackberries will allow the tart flavour of the fruit to come through, with minimal effort and maximum enjoyment.
