guacamole

serves 2 generously

1 large tomato, finely chopped

1 small red onion, finely chopped

½ small red chilli, halved and deseeded

2 ripe avocados

generous handful of fresh coriander (cilantro), roughly chopped

1 unwaxed lime

generous pinch of sea salt flakes

Guacamole should be chunky, rustic, and full of flavour. Mash the ingredients with a fork and get your hands involved to combine this traditional Mexican side dish.

Put the tomato and onion into a bowl.

Finely chop half the chilli and reserve the rest for another recipe. Add the chopped chilli to the bowl.

Halve the avocados and spoon out the flesh into the bowl, then mash the ingredients together.

Mix the coriander into the guacamole. Slice the lime in half and squeeze the juice through a sieve into the bowl before stirring through. Season with salt.

There’s no need to peel and chop the avocado, simply use a spoon to scoop out the ripe flesh.
