Rattles

100 g macadamia nuts, chopped

20 g butter

10 g filo pastry

10 g tomato powder

10 g almond powder

2 litres olive oil

salt

pepper

method

Brown the chopped macadamia nuts in a little butter. Set aside. Place four nut pieces in square flexipan moulds. Fill with olive oil and freeze for one day.

Unmould and wrap the frozen tablet in a sheet of filo pastry. Fry in plenty of oil until golden. Sprinkle with tomato powder, salt, pepper and almond powder.

Given that the frozen oil will melt during frying, the filo pastry will be wrapped around a few pieces of macadamia nuts, which upon shaking, resemble a rattle. Serve hot.
