‘Boiling cold’

ingredients

100 g vodka

150 g sugar

200 g tonic

100 g water

zest of 2 lemons

pinch of nutmeg

pinch of ground pepper

4 chopped basil leaves

4 chopped mint leaves

In addition

20 g dry ice (CO2)

method

First, thoroughly mix the sugar with the vodka. Then add the rest of ingredients.

Place 3 soup spoons of dry ice in a glass cafetière, pour in the prepared liquid and press the lid down to cause – through this pressure and the reaction of the dry ice – the ‘boiling cold’.
