Thermocut

ingredients

400 g water

5.5 g agar agar

280 g sugar

half stick of cinnamon

1 g gold dust

10 g glucose

method

Mix 100 g of water with the agar agar. Bring to the boil and add the remaining water, sugar, cinnamon and gold dust. Boil for 25 minutes over low heat. Add the glucose and boil for another 5 minutes. Leave to gel in the fridge for half an hour.

Once gelled, make artistic cuts with the thermocut. Allow to dry in the oven at 50°C for 72 hours until a crispy outer layer is formed and the interior remains gelatinous.

Place on a black marble plate and eat in one bite at room temperature.
