Simple Wild Rice Pilaf

For this recipe, you need a wild rice blend—the kind that has brown rice, wild rice, red rice, black rice, and so on in it. This is great as an accompaniment to holiday dinners, but is also fantastic as a stuffing for acorn squash or other winter squashes.

1. In the Instant Pot, combine the rice, mirepoix, oil, poultry seasoning, salt, and water. Stir to combine.

2. Secure the lid on the pot. Close the pressure-release valve. Select MANUAL and set the pot at HIGH pressure for 25 minutes. At the end of the cooking time, allow the pot to sit undisturbed for 20 minutes, then quick-release any remaining pressure.

3. Transfer to a serving bowl or platter. Top with almonds, cranberries, and/or raisins, if desired, and serve.
