This dish is referred to as a halva through much of India, but when I use that term here, people expect something made from sesame or nuts. So I use the South Indian word kesari to describe it. Kesari also means “orange,” and the few little saffron threads you use here add both fragrance and color.

1. In a 6 × 3-inch round baking pan, mix together the farina, dried fruit, sugar, ghee, cardamom, saffron, and water.
2. Pour 1½ cups water into the Instant Pot. Place a trivet in the pot. Place the pan on the trivet.
3. Secure the lid on the pot. Close the pressure-release valve. Select MANUAL and set the pot at HIGH pressure for 10 minutes. At the end of the cooking time, allow the pot to sit undisturbed for 5 minutes, then quick-release any remaining pressure.
4. Carefully remove the pan and stir the mixture until smooth.
5. Serve hot or chilled. If desired, stir in some cream and/or milk for a porridge-like texture.
