Total Time: 25 minutes plus 2 hours chilling time
1. In the Instant Pot, combine the lemongrass leaves, ginger, sugar, and water. Stir well.
2. Secure the lid on the pot. Close the pressure-release valve. Select MANUAL and set the pot at HIGH pressure for 2 minutes. At the end of the cooking time, use a natural release to depressurize.
3. Strain the tea into a pitcher and refrigerate until chilled, at least
2 hours. Stir in lemon juice to taste.
4. Serve over ice.
