Mrs. O’Leary’s Cow Crust

This rub is specially formulated for beef roasts and named for the cow falsely accused of starting the Great Chicago Fire in 1871. She may not have started it, but she was roasted—sadly without a good rub.

Makes 4 tablespoons, enough for 10 to 12 pounds trimmed beef

Takes about 10 minutes

• 2 tablespoons freshly ground black pepper
• 2 teaspoons dried rosemary leaves, crushed in a mortar and pestle or blender
• 2 teaspoons dried thyme or oregano
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon paprika
• ½ teaspoon chipotle powder

Mix all the ingredients together in a bowl.
